These chronicles, as a matter of fact, are the result of my last two trips, with a very small time lapse in between. The main reasons of my trips were, ( first trip ) surprise and celebrate my mother for her Birthday and ( second trip ) connecting from New York to Rio de Janeiro, were I will be during August, attending the RIO 2016 Summer Olympics, as the official travel agent for NBCUniversal’s VIP Guests and Executives. FullSizeRender 10THAI Cooking Class at the Mandarin Oriental Bangkok  |  BangkokThailand  | After a long night out in Bangkok which began in full luxury and ended up right in the underground scene, I was awake pretty early, with a pounding headache and hangover, but determine to conquer the day ahead, which included an full morning Thai Cooking Class at The Oriental Thai Cooking School of the Mandarin Oriental Bangkok, follow by a 3-hours Khlong tour of Bangkok. So my first stop was shades to conceal the damage of my late night out, and ultra healthy breakfast over an ultra spicy Khao Tom soup to sweat away the many bottles of Champagne I had. Apothéke Mixology and Prescriptions

20130825-122712.jpgApothéke Mixology and Prescriptions | New York, United States | Inspired by the history and rise of the apothecary in Europe as well as the artistic influence of absinthe dens in 19th century Paris, Apothéke is the first of its kind. The entire experience from wandering down a hidden street to find the entrance, to tasting the first sip of a specialty cocktail made with exotic herbs and fruits – is a privilege. I have only experienced such take on mixology before at The Alchemist in Manchester, UK.
20130825-122855.jpg At Apothéke, the presentation of a cocktail is just as dramatic as the cocktail itself. The bar is no longer a bar. It’s a stage. A chemistry lab. A theatre. A unique-shaped Austrian crystal glass is carefully selected for each cocktail, and into it, is poured a beautiful, jewel-colored liquid. This is much more than a cocktail bar – this is a cocktail apothecary.
20130825-123147.jpg My choices for the night, three of them… Well two different cocktails, and one repeat ha ha. Call me crazy but anything that has cilantro and is combined with ginger and the word Buddha in it, I am down with it, so two of those drinks were a Sitting Buddha, Absolut Vodka, Lemongrass, Fresh Pineapple, Cilantro, Ginger, Lillet Blanc, Lime, Skin Tincture. And then one The Matador, Olmeca Altos Reposado Tequila, Bell Pepper, Cantaloupe, Habañero Bitters, Pink Peppercorn, Sea Salt Rim.
20130825-123300.jpgJust arriving on the taxi and going by Doyers St alley and seeing all the cool people walking by and around looking for the little door, right in the heart of Chinatown, with the trash truck wondering around, the low lights and smells classic of this neighborhood, and all of the sudden walk through the door, after you make it through the invitees list… WOW just so many flashbacks on my late fun nights in Asia in Hong Kong, Bangkok or Chiang Mai. Private dinner at The Rock Punta Mita

Private dinner at The Rock Punta Mita  |  Punta Mita, Mexico  |  This morning I arrived to Punta Mita at Riviera Nayarit in Mexico, hosted by the Four Seasons Punta Mita. Tonight was my first dinner and they fully went out of their way to impress me with a private dinner at The Rock. The Rock is a bespoke by request restaurant that only pops up at the hotel for very VIP or special occasions.
Accompanied by Jason Santamaria – Sales Manager at FS Punta Mita, we enjoyed a very well though menu of 4 steps including all local fresh produce like lobster, Shrimp, Calamari and the fish of the day Mahi-Mahi all specially prepared and presented by the Chef of the Resort, along with some bottles of Dom Perignon Champagne, while enjoying the views of a stunning sunset over Mansanillo Beach overlooking the Pacific Ocean.
 A romantic dinner, a celebration for a small private group, or maybe why not just to be enjoyed on your own, overlooking the sunset and later the moon reflecting over the water and the stars shining along the heat of your fire.  What an special unique haute experience. This happens on top of The Rock, overlooking Mansanillo Beach.
I would definitely walk down the aisle and say ” YES I DO ” surrounded by this breathtaking setting, wouldn’t you ? Sunrise or Sunset, Gay or Straight… And after a lovely ceremony on The Rock, a local dinner at Las Cuevas Beach, see below…
Indeed a gourmet experience it took me by surprise and I was not expected. I mean, you get amazing hotels with lovely views like this all over the world, but the execution to detail and professionalism, I hope you can see and read through my photos, it is what only companies like Four Seasons Worldwide can make happen. MUST Try. !!! Now time to relax at the fire contemplating the moon and listening to the rumbling of the Pacific Ocean, sipping through my late harvest sweet white wine. At OLO Ravintola something is very fishy

At OLO Restaurant something is very fishy |  Helsinki, Finland  |  OLO in Finnish means Feeling. At OLO Ravintola (aka. Finnish for restaurant) something is very fishy, and not in a bad way. If I would have to choose my favorite Finnish gourmet while in Helsinki, I would not hesitate for a second to say OLO Restaurant. Michelen star restaurant offering a modern Nordic gourmet cuisine experience. A set menu to showcase the amazing fresh fish from the region. Clarity of design and generous flavours as known from their grandmother’s times. Their menu follows the yearly cycle of the Nordic nature, bringing to the table only what is at best at a given time.
Starter: Lavaret from Kvarken with dill (European white Fish), match with a Langenlois Terrasen Riesling 2007, Loimer Kamptal – Austria. The main dining area seats 48 people in a pleasent environment. Interior design by Kari Lappalainen features forest inspired ornaments on the wall, dark wooden furniture and classic white table clothes. But the restaurant (or ravintola how is said in Finnish) also features a Small Room, an intimate space for 24 people. OLO Cabinet and Wine Cabinet, both for 10 people. OLOKolo, where you can have your own kitchen to host your own group, and cook to your invitees with the assistance and supervision of Olo’s cooks. And starting May 2013, they will also launch OLO Terrace Bar, comfortable city terrace with a lounge atmosphere. The bar will be located in the courtyard of the restaurant’s building, so it’s the natural place to start and end your evening.
Main Course: Pike perch from Hoytiainen with cauliflower, matched with a Pouilly-Fuisse 2007, Joseph Faively, Rhone – France. The Nordic kitchen is fairly tolerant with various wine tastes. The classics as well as wines from the new world find their match with varying flavours of different seasons.
 As a Dessert they had to twist my arm over and over… Pan Cake or Pannukakkua, matched with a wonderful sweet wine Errazuriz Late Harvest Sauvignon Blanc 2010, Casablanca Valley – Chile. Imagine that after this lovely lunch and all the various types of wine, I have to take my train, the ALLEGRO, from Helsinki to St Petersburg, Russia. So I had a long nice nap. BERNS Asiatiska Restaurant  |  Stockholm, Sweden  |  Finally I have found my favorite hang out venue in Stockholm. When I travel I am very territorial, and always like to have my set of restaurant and bar, where I can enjoy great drinks, have a fabulous dinner and be surrounded by a chic/cool crowd and ambiance. Le 1899 Restaurant

Le 1899 Restaurant  |  Deauville, France  |  If there was a restaurant that stood out of the bunch during my visit to Deauville, was without second thoughts the Le 1899 Restaurant, located at the Le Manoir de Tourgeville Hotel. A Michelin star restaurant where heart, mind and soul blend to master a great Normand Gourmet experience.
Located only 15 minutes away from the center of Deauville. Coral and plum are the dominating tones of the décor, providing a joyful and warm atmosphere. The cuisine pays homage to the traditional gastronomy of the Normandy region, with a modern and creative twist, mixed with inspirations from other countries and regions. My only recommendation would be to have lower lights and chandeliers, to compliment the fireplace and help to create a cozier and more intimate space. My choices for the night were: A started of poached egg over a bed and sauce of Mushrooms.
Main was the Bar or SeaBass, which was prepared in front of our eyes by the Director of Food & Beverages, on a magistral demonstration of technique and old school.
Dessert, was one of the many classics of the Normand Cuisine, that I tried during my whole stay, featuring one on the most noble products of this region, the apple. An apple flavoured with Calvados and wrapped in flaky pastry. All along with several coupes de champagne rose and some Burgundy dry white wines. Must try if you happen to be in Deauville.
