Ajochile Bass with tender tamal of hoja santa and purslane. For my dessert, chosen by Martha Ortiz herself ” Lluvia que pare el fuego ” of Potzol Ice-Cream made of Corn and Chocolate. Inspired on the coffee producers of Mexico, protecting their harvesting from the fires with rain. At the end a lovely interpretation of Petit Fours Mexican style.
