The Pompadour Restaurant | Edinburgh, Scotland | One of the things which quite strike me during my recent visit to Edinburgh, Scotland, was the number of FABULOUS restaurants available, for such a lovely but tiny destination. The Pompadour Restaurant was not an exception, on the contrary was pretty much on my top 05 rule. I guess I could define myself as a foodie, but what I truly enjoy, is the experience overall. I am not a gourmet connoisseur, but I do know how to create experiences and tell a travel or gourmet story, and The Pompadour, has quite and interesting one, lead by this legion of young professionals, who will blow you away with the style, knowledge and artistry, and make your dining experience a truly memorable one.

Dine at The Grand Old Lady of Edinburgh Restaurants – The Pompadour by Chefs Galvin. Situated on the entresol level of The Caledonian, A Waldorf Astoria Hotel. The Pompadour’s extravagant, listed interior décor reflects the sumptuousness of the royal court of the day, and the restaurant has long enjoyed the reputation of having the best table in Edinburgh, with impressive views overlooking Princes Street and Edinburgh Castle through the panoramic arched windows.
The room takes the name from the celebrated Madame de Pompadour, the favourite mistress of King Louis XV of France, at whose behest Madame de Pompadour was installed in the magnificent Palace at Versailles. He created and curated this room for her, but the rumors say that she never got to be in it or see it.
The Pompadour by Galvin continues its tradition of classical French excellence under the guidance of the estimable Galvin Brothers. I spent the full soiree on my own, which I must admit, I truly enjoy. I like to see how the whole rooms moves and flows, and in this case I was amazed by the synergy and sync between the Maitre-D and the Sommelier, just gourmet poetry.
I enjoyed a 3-steps dinner with a pairing chosen by the Sommelier. The dining experience took over 3 hours approx., but it felt shorter indeed. The à la carte and tasting menus at The Pompadour by Galvin are imbued with the brothers’ ethos of peerless style and sophistication, and feature the best in traditional French haute cuisine, with classical French-inspired dishes and a selection of Scottish and English favourites, prepared using the finest, locally-sourced, seasonal ingredients derived from the Galvins’ network of Scottish suppliers, growers, farmers and fishermen.
