What better venue than Les Amis to celebrate a special occasion to be a birthday party as I did, an anniversary or simply to share it with a special person. Sophisticated, private and very quite atmosphere offering guests a flawless gastronomic dinning experience, where all sense play a very special role. Les Amis boasts one of the most extensive wine lists in all Asia, including the biggest ever magnum bottle of Cristal champagne I have seen in my life. Options from both the Old and New World, which will be match to perfection by the expert sommelier.
Les Amis opened its doors at the Shaw Centre in 1994, as the flagship fine dinning French restaurant of Singapore. Austrian descent Chef Armin Leitgeb, former The French Laundry, and several European Michelin 3 star venues, brings his signature style of fine cooking, emphasizing the importance of textures and flavors, leaving no margin for errors. He says… ” The simplest techniques of cooking are actually the most difficult, because there is nothing to camouflage any mistakes…”. Definitely a pleasant gastronomic experience full of surprising reactions. We spent the whole dinner over WOWs and OHHHss. Professional, knowledgeable,  friendly staff, proud on providing guests with impeccable service, contrary to common belief that service staff at fine-dinning establishments are stiff or unfriendly.
A five steps menu, matched to perfection with the long selection of international and domestic wines. I was introduced to dishes I have not tried before and blown away by them, like the one above… lightly smoked eel with crispy pork croutons, horseradish and Dijon mustard emulsion.
Pan seared Norwegian scallops pied bleu mushrooms, spinach and saffron rouille. His dishes not only captivate your palate but also your sight. Where each dish is presented in an unique artistic way.
Whole poached Hungarian goose foie gras black mission figs, fennel and crispy apple bread. The texture was like melting in you mouth.
Whole roasted Babymonkfish on the Bone, Maitake mushrooms, lettuce and caper-lime jus. Watching the Maitre’D serve our portions on the gueridon was a trip back to old traditional service.
Deconstructed fancy Lemon tarte thyme ice cream follow by a great chat with our Maitre’D over a few shots of strong Austrian Schweppes. An amazing evening and the perfect option to celebrate the end of my Birthday week in great company.
Les Amis member of the Les Grandes Tables du Monde, is located at the Shaw Centre. Also offers private rooms and a Chef’s Table, nested cosily in the basement.
